I’m back!!

Missed me? Winking smile I missed you guys, so I’m hoping to just catch up on what you’ve all be up to this week at work Open-mouthed smile

New Computer= love of my life and seems to be working pretty smoothly.  Me and Windows 8 had a hot date Friday night for me to get acquainted with it Winking smile

So far, so good.

This weekend was a little boring for me.. not too much going on since I didn’t want to drive anywhere in fear of having to get gas Surprised smile

As of now we’re on an odd/even day schedule so if you have a license plate that ends in an odd number you go today… so that’s where I’ll be after work… bummer.  I’m hoping the lines aren’t too crazy.

My two friends got their power back this weekend which came at the PERFECT time since it was like the arctic tundra out lol I wore my fuzzy socks and slippers and was still cold as I watched my Mom parade around in her t-shirt and flip flops.

I did manage to get some running in this weekend, it was a challenge since it was so windy haha but I managed Winking smile

And if you caught on… YES I am talking to someone Smile with tongue out We kinda have a funny story of how we met.  My Dad actually always wanted me to meet him lol but we first started talking a little over 2 years ago.  Then we stopped for some reason and I started dating some loser… me and him broke up… then we recently started talking again Smile

He was cute.. checking in on me during the hurricane and such… and idk about you, but that kinda says somebody likes me Winking smile

He calls me nerd, so it’s only fair I call him dork.. right? Winking smile

I have a marvelous recipe for you all!!

Vegan Pumpkin Pear Bread!

I found this recipe in Vegetarian Times and changed it up to veganize it.. since I bake all vegan Smile

2 cups flour
1/2 cup sugar
1 cup pumpkin
1 15oz can pears
1/2 cup unsweetened apple sauce
Cinnamon
Pumpkin spice
1 tsp vanilla extract
1/2 tsp salt
2 tsp baking soda
1 tsp baking powder
1 flax egg (1 tbsp flax + 2 tbsp warm water)

Directions: Mix together the dry ingredients (flour, salt, baking soda, baking powder, cinnamon, and pumpkin spice). Place in bowl and set aside.  Then mix together the wet ingredients (pumpkin, sugar, vanilla extract, flax egg, apple sauce).  Gently stir the wet and dry ingredients to combine them.  Stir until clump free.  Chop up pears and mix into the batter.  Bake at 350 degrees for 45-55 minutes or until tooth pick comes out clean. Wait to cool, serve, and enjoy Open-mouthed smile

It came out really good.  Only 120 calories a slice, serves around 12 people.
